Tomato and
Mixed Raw Vegetables Recipe
Ingredients

14 oz/4oo g Mozzarella cheese

4-6 large red tomatoes
-
1 cup/250 g mixed raw vegetables (zucchini, carrots,
celery, bell peppers, onion), cut in small cubes

1 tbsp pickled capers, drained
-
salt and freshly ground black pepper to taste

4
tbsp
extra-virgin olive oil
-
8 leaves fresh basil, torn
Method:
-
Cut
the Mozzarella into 1/4-inch (5-mm) thick slices and
arrange on a flat serving dish.

Cut the tomatoes in slices of the same width and
place over the Mozzarella.

Place the mixed vegetables in a bowl with the
capers, salt, pepper, and oil.

Toss well and
sprinkle over the Mozzarella
and tomato.
Garnish with the basil and serve.
