Tomato and Mixed Raw Vegetables Recipe

 

Ingredients

 

Serve 4-6

  • 14 oz/4oo g Mozzarella cheese

  • 4-6 large red tomatoes

  • 1 cup/250 g mixed raw vegetables (zucchini, carrots, celery, bell peppers, onion), cut in small cubes

  • 1 tbsp pickled capers, drained

  • salt and freshly ground black pepper to taste

  • 4 tbsp extra-virgin olive oil

  • 8 leaves fresh basil, torn


Method:

  1. Cut the Mozzarella into 1/4-inch (5-mm) thick slices and arrange on a flat serving dish.

  2. Cut the tomatoes in slices of the same width and place over the Mozzarella.

  3. Place the mixed vegetables in a bowl with the capers, salt, pepper, and oil.

  4. Toss well and sprinkle over the Mozzarella and tomato. Garnish with the basil and serve.
