Strawberry and Cucumber Salad Recipe

 

Ingredients

 

Serve 4

  • 10 oz/300 g strawberries, washed, hulled, and thinly sliced

  • 1 tbsp balsamic vinegar

  • 1 cup/250 ml low-fat yogurt

  • 1 tbsp finely chopped mint

  • 3 tbsp walnut oil

  • salt and freshly ground pink (or black) pepper to taste

  • 7 oz/200 g mixed salad greens

  • 1/2 cup/100 g cooked brown rice

  • 1 cucumber, thinly sliced


Method:

  1. Place the strawberries in a large bowl and drizzle with the balsamic vinegar.

  2. Mix the yogurt and mint in a medium bowl. Stir in the oil and season with salt. Refrigerate until ready to use.

  3. Wash the salad and dry well. Place in a salad bowl.  Arrange the rice on top of the salad, followed by the strawberries and cucumber.

  4. Spoon the yogurt sauce over the top. Season with pepper and serve.
