Spinach and Avocado Salad Recipe

 

Ingredients

 

Serve 4

  • 2 tbsp finely chopped parsley

  • 1 tsp whole-grain mustard

  • 5 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste

  • 7 tbsp cream

  • 7 oz/200 g fresh baby spinach leaves

  • 1 large ripe avocado, peeled, pitted, and sliced


Method:

  1. Mix the parsley, mustard, and oil in a small bowl. Season with salt and pepper. Add the cream and beat until smooth and glossy.

  2. Toss the spinach, avocado, and dressing in a large salad bowl. Drizzle with the dressing and serve.
