Avocado Salad Recipe

chopped parsley

1 tsp whole-grain mustard

5 tbsp extra-virgin olive oil

salt and freshly ground black
pepper to taste

7 tbsp cream

7 oz/200 g fresh baby spinach leaves

1 large ripe
avocado, peeled, pitted, and sliced
Method:

Mix the parsley, mustard, and oil in a small bowl.
Season with salt and pepper. Add the
cream and beat until smooth and glossy.

Toss the
spinach, avocado, and dressing in a large salad
bowl. Drizzle with the dressing and serve.
