Sauerkraut Salad Recipe
Ingredients
Serve

1 lb/500 g
sauerkraut,
drained and coarsely chopped

2 pickled cucumbers, cut into
small cubes
-
1 gherkin, cut into small cubes
-
2-3 pickled red and
yellow roast
bell peppers, thinly sliced
-
1 onion, finely sliced
-
1 tbsp corn oil
-
2 tbsp extra-virgin olive oil
-
1/8 tsp sugar
-
salt and freshly ground white pepper to taste
Method:

Place
the sauerkraut, cucumbers, gherkin, bell peppers,
and onion (reserving a few slices for garnish) in a
large salad bowl.

Add both oils and
sugar. Season with salt and pepper.
-
Toss and let
the salad absorb the dressing for 30 minutes.

Garnish with the reserved onion and serve.
