Serbian Sauerkraut Salad Recipe

 

Ingredients

 

Serve 4

  • 1 lb/500 g sauerkraut, drained and coarsely chopped

  • 2 pickled cucumbers, cut into small cubes

  • 1 gherkin, cut into small cubes

  • 2-3 pickled red and yellow roast bell peppers, thinly sliced

  • 1 onion, finely sliced

  • 1 tbsp corn oil

  • 2 tbsp extra-virgin olive oil

  • 1/8 tsp sugar

  • salt and freshly ground white pepper to taste


Method:

  1. Place the sauerkraut, cucumbers, gherkin, bell peppers, and onion (reserving a few slices for garnish) in a large salad bowl.

  2. Add both oils and sugar. Season with salt and pepper.

  3. Toss and let the salad absorb the dressing for 30 minutes.

  4. Garnish with the reserved onion and serve.
