Potato and Chard Bread Salad Recipe

 

Ingredients

 

Serve 4

  • 2 cloves garlic, finely chopped

  • 4 tbsp extra-virgin olive oil

  • 3 potatoes, peeled and diced

  • salt and freshly ground black pepper to taste

  • 1 fresh hot chili pepper, finely chopped

  • 2 tbsp hot water

  • 14 oz/400 g Swiss chard or spinach, finely shredded

  • 7 oz/200 g day-old bread, broken up into pieces


Method:

  1. Sauté the garlic in 3 tablespoons of oil in a large frying pan until pale gold.

  2. Add the potatoes and season with salt. Add the chili pepper and water. Cook over low heat for about 10 minutes, or until the potatoes are tender.

  3. Cook the Swiss chard in salted, boiling water for 5-7 minutes, or until wilted. Drain.

  4. Add to the potatoes with the bread. Mix well and return to the heat. Season with salt and pepper.

  5. Drizzle with the remaining oil and serve hot.
