Pear and Bell Pepper Salad Recipe

 

Ingredients

 

Serve 4-6

  • 3 medium bell peppers (mixed colors)

  • 2 large ripe pears

  • juice of 1 lemon

  • 1 clove garlic, finely chopped (optional)

  • salt and freshly ground black pepper to taste

  • 1 tbsp finely chopped parsley

  • 4 tbsp extra-virgin olive oil


Method:

  1. Clean the bell peppers by removing the stalk, seeds, and core.

  2. Rinse under cold running water, drain, and dry well. Cut in short, thin strips.

  3. Rinse the pears. Peel, core, and cut into match size sticks. Drizzle with the lemon juice.

  4. Place the pear and bell peppers in a salad bowl. Add the garlic (if using), salt, pepper, parsley, and oil.

  5. Toss gently and serve. Arrange on serving plates.
