Orange and Olive Salad Recipe

 

Ingredients

 

Serve 4

  • 4 ripe, juicy ranges

  • 10 green or black olives, pitted and cut into quarters

  • white of 1 leek, thinly sliced into rings

  • 1 tbsp finely chopped parsley

  • 4 tbsp extra-virgin olive oil

  • salt and freshly ground black or white pepper to taste


Method:

  1. Peel the oranges, removing all the white pith and skin. Slice thinly.

  2. Place the oranges in a salad bowl and add the olives, leek, parsley, and oil. Season with salt and pepper.

  3. Toss gently and let stand for 10 minutes before serving.
