Olive Salad Recipe
Ingredients

4 ripe, juicy ranges
-
10 green or black olives, pitted and cut
into quarters

white of 1 leek, thinly sliced
into rings
-
1 tbsp finely chopped parsley
-
4 tbsp extra-virgin olive
oil
-
salt and freshly
ground black or
white pepper to taste
Method:
-
Peel the oranges, removing all the white pith and
skin. Slice thinly.

Place the oranges in a salad bowl and add the
olives, leek, parsley, and oil.
Season with salt and pepper.

Toss gently and let
stand for 10 minutes before serving.
