Orange and Artichoke Salad Recipe

 

Ingredients

 

Serve 4

  • 6 artichokes

  • juice of 1 lemon

  • 2 oranges, peeled and cut into segments

  • 3 oz/90 g Pecorino Romano cheese, flaked

  • 1 tbsp finely chopped parsley

  • 6 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste


Method:

  1. Clean the artichokes by trimming the stalks and cutting off the top third of the leaves.

  2. Remove the tough outer leaves by pulling them down and snapping them off at the base.

  3. Cut the artichokes in half and use a sharp knife to remove any fuzzy core. Cut the artichokes into thin wedges.

  4. Place the artichokes in a large salad bowl and drizzle with , half the lemon juice. Add the oranges, Pecorino, and parsley.

  5. Drizzle with the oil and remaining lemon juice and season with salt and pepper. Toss well and serve.
