North African Salad Recipe

 

Ingredients

 

Serve 4

  • 3 scallions/spring onions, white parts only

  • 1 bunch arugula/rocket

  • 1 bunch radishes, washed and thinly sliced

  • 3 oranges, peeled and thinly sliced

  • 2/3 cup/50 g pitted black olives                   

  • 15-20 shelled walnuts, coarsely chopped

Dressing:

  • 4 tbsp fresh orange juice

  • 4-6 tbsp extra­virgin olive oil

  • salt and freshly ground black pepper to taste

  • juice of 1 lemon

  • 1 tbsp orange flower water

  • 1/8 tsp ground cinnamon


Method:

  1. Soak the scallions in a bowl of iced water for 10 minutes to lose their pungent flavor. Drain and slice in thin rings.

  2. Wash and chop the arugula and place in a large bowl. Add the radishes, oranges, olives, scallions, and walnuts.

  3. Dressing: Beat the orange juice and oil with a pinch of salt and pepper. Add the lemon juice, orange flower water, and cinnamon and mix until blended.

  4. Drizzle over the salad and serve.
