African Salad Recipe
Ingredients

scallions/spring
onions, white
parts
only

1 bunch
arugula/rocket
-
1 bunch radishes, washed and thinly sliced
-
3 oranges, peeled
and thinly sliced
-
2/3 cup/50 g pitted black olives
-
15-20 shelled walnuts, coarsely chopped
Dressing:
-
4 tbsp fresh orange juice
-
4-6 tbsp extravirgin olive oil
-
salt and freshly ground black
pepper to taste
-
juice of 1 lemon
-
1 tbsp orange flower water
-
1/8 tsp ground cinnamon
Method:
-
Soak the scallions in a bowl of iced water for 10
minutes to lose their pungent flavor.
Drain and slice in thin rings.

Wash and chop the arugula and place in a large bowl.
Add the radishes, oranges, olives, scallions, and
walnuts.
-
Dressing: Beat the orange juice and oil with a pinch
of salt and pepper. Add the lemon juice, orange
flower water, and cinnamon and mix until blended.

Drizzle over the salad and serve.
