Mandarin, Apple and Tomato Salad Recipe

 

Ingredients

 

Serve 4

  • 3 endive hearts, well-washed

  • 1 cup/250 ml sour cream

  • juice of 1 lemon

  • juice of 1/2 orange

  • 7 oz/200 g tomatoes, cut into small cubes

  • 5 oz/150 g tart apples, peeled, cored, and cut into small cubes

  • 2 mandarins, peeled and cut into small cubes

  • 1 scallion/spring onion, finely chopped

  • 1 tbsp finely chopped parsley


Method:

  1. Discard any damaged or discolored outer leaves from the endives. Reserve 12-15 attractive outer leaves and coarsely chop the remainder.

  2. Arrange the outer leaves like the spokes in a wheel on a large serving plate.

  3. Place the sour cream, lemon juice, orange juice, chopped endives, tomatoes, apples, mandarins, scallion, and parsley in a medium bowl and toss well.

  4. Spoon the mixture into the center of the plate and serve.
