Apple and Tomato Salad Recipe
Ingredients

3 endive hearts, well-washed
-
1 cup/250 ml sour cream

juice of 1 lemon
-
juice of 1/2 orange
-
7 oz/200 g tomatoes, cut into
small cubes
-
5 oz/150 g tart
apples, peeled, cored, and cut into small cubes
-
2 mandarins, peeled
and cut into small cubes
-
1 scallion/spring
onion, finely chopped
-
1 tbsp finely
chopped parsley
Method:
-
Discard
any damaged or discolored outer leaves from the
endives. Reserve 12-15
attractive outer leaves and coarsely chop the
remainder.

Arrange the outer leaves like the spokes in a wheel
on a large serving plate.

Place the sour cream, lemon juice, orange juice,
chopped endives, tomatoes, apples, mandarins,
scallion, and parsley in a medium bowl and toss
well.

Spoon the mixture into the center of the plate and
serve.
