Vegetable Salad Recipe

1 grapefruit

1 Golden Delicious
apple

1 tbsp capers
-
1 cup/100 g black
olives, pitted

8 oz/250 g Gruyere cheese, cut into small cubes

1 cup/125
ml
extra
virgin olive oil
-
juice of 1/2 lemon
-
salt and freshly ground black
pepper to taste
Method:

Wash,
drain, and chop the lettuce coarsely.

Peel the grapefruit, taking care to remove all the
bitter white pith beneath the skin, and chop
coarsely.
Peel, core, and chop the apple.

Mix
together in a salad bowl with the capers, olives,
and Gruyere.

Drizzle with the oil and lemon juice. Season with
salt and pepper.
Toss well and serve.
