Salad Recipe
Ingredients

10 oz/300 g precooked, couscous
-
14 oz/400 g mixed
vegetables (bell peppers/capsicum, scallion/spring
onion, tomatoes, cucumber, zucchini/courgettes)

1/2 cup/125 ml
extra-virgin olive oil
-
juice of 1/2 lemon
-
salt to taste
-
fresh mint, finely
chopped
Method:

Prepare
the couscous according to the instructions on the
package.

Wash the vegetables and chop them all into small
cubes.
-
Place in a large salad bowl and mix in the couscous.
-
Drizzle with the oil and lemon juice. Season with
salt and add the mint.
Toss well and serve.
