Couscous Salad Recipe

 

Ingredients

 

Serve 4

  • 10 oz/300 g pre­cooked, couscous

  • 14 oz/400 g mixed vegetables (bell peppers/capsicum, scallion/spring onion, tomatoes, cucumber, zucchini/courgettes)

  • 1/2 cup/125 ml extra-virgin olive oil

  • juice of 1/2 lemon

  • salt to taste

  • fresh mint, finely chopped


Method:

  1. Prepare the couscous according to the instructions on the package.

  2. Wash the vegetables and chop them all into small cubes.

  3. Place in a large salad bowl and mix in the couscous.

  4. Drizzle with the oil and lemon juice. Season with salt and add the mint. Toss well and serve.
