scraped and coarsely grated

1 cup/200 g bean sprouts

1 cup/250 ml plain yogurt

salt and freshly ground black pepper to taste

4 large lettuce leaves
Method:

Toss
the carrots, bean sprouts, and yogurt in a large
bowl. Season with salt and pepper.

Arrange the lettuce leaves in a serving dish and
spoon the salad over the top.
