Avocado and Mandarin Salad Recipe

 

Ingredients

 

Serve 4

  • 1 head red radicchio or chicory, finely shredded

  • 1 red onion, very finely sliced

  • 1 large ripe avocado, peeled, pitted, and cut into cubes

  • 2 mandarins, peeled and cut into segments

  • 4-6 tbsp extra-virgin olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp red wine vinegar

  • salt and freshly ground black pepper to taste

  • 1 tbsp pumpkin seeds, toasted


Method:

  1. Toss the radicchio and onion in a salad bowl. Arrange the avocado and mandarins on top in a decorative manner.

  2. Mix the oil, mustard, vinegar, and salt and pepper in a small bowl.

  3. Drizzle the dressing over the salad. Sprinkle with the pumpkin seeds. Serve immediately.
