Avocado and
Mandarin Salad Recipe
Ingredients

1 head red
radicchio
or chicory, finely shredded

1 red onion, very finely sliced

1 large ripe
avocado, peeled, pitted, and cut into cubes

2 mandarins, peeled and cut into segments

4-6 tbsp extra-virgin olive oil
-
1 tbsp Dijon mustard
-
1 tbsp red wine vinegar
-
salt and freshly ground black pepper to taste

1 tbsp pumpkin seeds, toasted
Method:

Toss the radicchio and onion in a salad bowl. Arrange
the avocado and mandarins on top in a decorative
manner.

Mix the oil, mustard, vinegar, and salt and pepper
in a small bowl.

Drizzle the dressing over the salad. Sprinkle with
the pumpkin seeds.
Serve immediately.
