Avocado and Apple Salad Recipe

 

Ingredients

 

Serve 2-4

  • 4 tbsp extra-virgin olive oil

  • 1 tbsp apple vinegar

  • salt and freshly ground black pepper to taste

  • 1 large firm-ripe avocado, cut into quarters

  • 1 Granny Smith apple


Method:

  1. Mix the oil and apple vinegar in a small bowl. Season with salt and pepper.

  2. Peel the avocado and chop coarsely. Arrange in a salad bowl and pour over the dressing.

  3. Peel and chop the apple and add to the avocado. Cover with plastic wrap (cling film) and refrigerate for 1 hour. Serve chilled.
