Bread Salad Recipe

g
rustic farmhouse bread, preferably salt less

1 clove garlic
-
4
large
firm-ripe tomatoes, coarsely
chopped
-
salt and freshly
ground black pepper to taste
-
juice of 1 lemon
-
5 tbsp extra-virgin olive oil
-
1 small bunch fresh basil, tom
-
1 red onion, coarsely chopped
-
1 cucumber, peeled and diced
-
1 green celery heart, coarsely chopped
-
30 black olives, pitted and chopped
-
1 bunch arugula/rocket
Method:

Slice
the bread thinly and toast on both sides under the
broiler (grill).

Rub all over with the garlic, let cool, and cut into
cubes.

Place the tomatoes in a colander set over a bowl and
sprinkle with salt. Let drain for 15 minutes.

Mix the lemon juice, 5 tablespoons of oil, the
basil, and salt and pepper in a small bowl.
-
Place all the ingredients in a salad bowl.
Pour the oil dressing over the top and toss well.

Let stand for 30 minutes before serving.
