Artichoke Salad Recipe

 

Ingredients

 

Serve 4

  • 4 large fresh artichokes

  • juice of 2 lemons

  • 1 tsp salt

  • 1/2 cup/125 ml extra-virgin olive oil

  • freshly ground black pepper to taste

  • 2 tbsp finely chopped parsley

  • 2 tbsp finely chopped mint


Method:

  1. Clean the artichokes by removing all the tough outer leaves and trimming the tops and stalks.

  2. Remove the fuzzy inner choke and cut into thin wedges. Soak in a bowl of cold water with the juice of 1 lemon for 10 minutes to prevent discoloring.

  3. Dissolve the salt in the remaining lemon juice. Add the oil, pepper, parsley, and mint and beat vigorously with a whisk to emulsify.

  4. Drain the artichokes and dry on a clean cloth. Place in a salad bowl.

  5. Pour the dressing over the top and toss well. Serve immediately.
