Salad Recipe
Ingredients

4 large fresh
artichokes
-
juice of 2 lemons
-
1 tsp salt
-
1/2 cup/125 ml
extra-virgin olive oil
-
freshly ground black pepper to taste

2 tbsp finely chopped parsley
-
2 tbsp finely chopped mint
Method:

Clean the artichokes by removing all the tough outer
leaves and trimming the tops and stalks.

Remove the
fuzzy inner choke and cut into thin wedges. Soak in
a bowl of cold water with the juice of 1 lemon for
10 minutes to prevent discoloring.

Dissolve the salt in the remaining lemon juice.
Add the oil, pepper, parsley, and mint and beat
vigorously with a whisk to emulsify.

Drain the artichokes and dry on a clean cloth.
Place in a salad bowl.

Pour the dressing over the
top and toss well.
Serve immediately.
