Apple, Raspberry and Walnut Salad Recipe

 

Ingredients

 

Serve 4

  • 2 large green apples, cored and thinly, sliced

  • 1 small curly­leaved lettuce

  • 4 oz/125 g Parmesan cheese, flaked

  • 1/2 cup/125 g raspberries

  • 1/2 cup/50 g walnuts, shelled

  • juice of 1 lemon

  • 4 tbsp extra-virgin olive oil

  • salt and freshly ground white pepper to taste


Method:

  1. Arrange the slices of apple around the outer edge of a large serving plate. Drizzle with half the lemon.

  2. Rinse the lettuce thoroughly under cold running water and dry well.

  3. Coarsely chop the lettuce and place in the center of the plate. Sprinkle with the Parmesan, raspberries, and walnuts.

  4. Drizzle with the remaining lemon juice and oil. Season with salt and pepper and serve.
