Tomato Pizza
with Pesto

Makes
one (12-inch/30cm) pizza

1 quantity Pizza Dough
(refer recipe)

1 1/4
cups/310 g Tomato Sauce
-
5 oz/150 g
Mozzarella
cheese,
thinly
sliced

1/2 cup/50
g black
olives
-
1 tbsp
extra-virgin olive oil
Method:

Prepare the
pizza dough and set aside to rise.

Preheat the
oven to 425°F/220°C/gas 7. Oil a 10 x 15-inch
(25 x 38-cm) baking pan.

When the
rising time has elapsed, knead the dough for 1
minute, then use your fingertips to press it
into the pan.

Drizzle with
the oil and season with salt. Bake for 25
minutes. Remove from the oven and sprinkle with
the cheese.

Bake for 5
more minutes. Drizzle with the pesto and add the
tomatoes. Serve hot.
