Three Cheese Pizza

Makes
one (12-inch/30cm) pizza

1 quantity Pizza Dough (refer recipe)

1 tbsp extra-virgin olive oil
-
1 tbsp milk
-
3 1/2 oz/100 g Mozzarella cheese, diced

3/4 cup/90 g freshly grated smoked Scamorza
cheese

3/4 cup/90 g freshly grated Fontina cheese

salt and freshly ground black pepper to taste
Method:

Prepare the pizza dough and set aside to rise.

Preheat the oven to 425°F/220°C/gas 7. Oil a
12-inch (30-cm) pizza pan.

Let rise for 1 hour, then knead the dough for 1
minute. Use your fingertips to press it into the
pan.

Brush with the oil and milk and set aside for 30
minutes. Bake for 20 minutes.

Remove from the oven and sprinkle with the
Mozzarella, Seamorza, and Fontina. Season with
salt and pepper.

Bake for 10 minutes, or until the cheese is
golden and bubbling. Serve hot.
