Pizza with Buffalo Mozzarella

Ingredients
Makes
one (12-inch/30cm) pizza

1 quantity Pizza Dough (refer recipe)

4-6 tomatoes
-
salt to taste
-
10 oz/300 g buffalo milk Mozzarella cheese
-
1 clove garlic, finely chopped
-
2 tbsp extra-virgin olive oil
-
fresh basil, torn, to garnish (optional)
Method:

Prepare the pizza
dough and set aside to rise.

Preheat the oven
to 425°F/220°C/gas 7. Oil a 12-inch (30-cm) pizza
pan.

When the rising
time has elapsed, knead the dough for 1 minute, then
use your fingertips to press it into the pan.

While the dough
is rising, blanch the tomatoes in boiling water for
1 minute. Drain and slip off the skins. Slice
thinly, removing as many seeds as possible.

Place the
tomatoes in a colander and sprinkle with salt. Let
drain for 15 minutes.

Slice the
Mozzarella thinly and let drain in another colander.

Place the
tomatoes, Mozzarella, and garlic on the pizza dough
and drizzle with the oil.

Bake for
15-25
minutes, or until
golden brown. Serve hot, garnished with basil, if
liked.
