Pizza with Bell
Peppers and Parmesan

Ingredients
Makes one (12-inch/30cm) pizza

1 quantity Pizza
Dough (refer recipe)

1 onion, finely
chopped
-
2 tbsp
extra-virgin olive oil
-
10 oz/300 g bell
peppers/capsicums, seeded, cored, and cut into thin
strips

salt to taste

1 1/2 oz/45 g
-
Parmesan cheese,
flaked
-
1 cup/100 g
pitted and chopped green olives
-
1 tbsp salt-cured
capers, rinsed
Method:

Prepare the
pizza dough and set aside to rise.

Sauté the
onion in the oil in a large frying pan over
medium heat for 2-3 minutes.

Add the bell
peppers. Partially cover and cook over low heat
for 15 minutes, stirring often. Season with
salt.

Preheat the
oven to 425°F/220°C/gas 7. Oil a 12-inch (30-cm)
pizza pan.

When the
rising time has elapsed, knead the dough for 1
minute, then use your fingertips to press it
into the pan.

Top with the
bell peppers and cooking liquid. Sprinkle with
half the Parmesan, olives, and capers.

Bake for
about 20 minutes, or until lightly browned.
Sprinkle with the remaining Parmesan and serve.
