Gorgonzola and Onion Pizza with Fresh Sage Recipe

 

Ingredients

 

Makes one (12-inch/30cm) pizza

  • 1 quantity Pizza Dough (refer recipe)

  • 2-4 tbsp extra-virgin olive oil

  • salt to taste

  • 2-3 tbsp finely chopped sage

  • 2 large white onions, peeled and thinly sliced into rings

  • 5 oz/150 g Gorgonzola cheese, crumbled


Method:

  1. Prepare the pizza dough and set aside to rise. Preheat the oven to 425°F/220°C/gas 7.

  2. Oil a 12-inch (30-cm) pizza pan. When the rising time has elapsed, knead the dough for 1 minute, then use your fingertips to press it into the pan.

  3. Drizzle with a little oil. Sprinkle with the sage and then the onion rings. Season with salt. Bake for 15-20 minutes.

  4. Sprinkle the pizza with the Gorgonzola and bake for 5-10 minutes more, or until the cheese is bubbling and golden. Serve hot.
