Gorgonzola and
Onion Pizza with Fresh Sage

Ingredients
Makes
one (12-inch/30cm) pizza

1 quantity
Pizza Dough (refer recipe)

2-4 tbsp
extra-virgin olive oil

salt to taste

2-3
tbsp
finely
chopped sage

2 large white
onions, peeled and thinly sliced into rings

5 oz/150 g
Gorgonzola cheese, crumbled
Method:

Prepare the
pizza dough and set aside to rise. Preheat the
oven to 425°F/220°C/gas 7.

Oil a 12-inch
(30-cm) pizza pan. When the rising time has
elapsed, knead the dough for 1 minute, then use
your fingertips to press it into the pan.

Drizzle with
a little oil. Sprinkle with the sage and then
the onion rings. Season with salt. Bake for
15-20 minutes.

Sprinkle the
pizza with the Gorgonzola and bake for
5-10
minutes more,
or until the cheese is bubbling and golden.
Serve hot.
