Deep-Crust Pizza with Goat's Cheese

Makes
one (12-inch/30cm) pizza

1 quantity Pizza Dough
(refer recipe)

2/3 cup/150 g
fresh creamy goat's cheese (Caprino)

2 cloves
garlic, finely chopped
-
15 cherry
tomatoes, halved

15 black
olives, pitted
-
salt and
freshly ground black pepper to taste

2 tbsp
extra-virgin olive oil
Method:

Prepare the pizza dough and set aside to rise.

Preheat the oven to 425°F/220°C/gas 7. Oil an B-inch
(20-cm) pizza pan.

When the rising time has elapsed, knead the dough
for 1 minute, then divide it in two.

Roll the dough out on a lightly floured work surface
into two thick rounds. Place one in the prepared
pan.

Spread with the goat's cheese and garlic. Top with
the remaining dough, pressing down lightly to seal.
Set aside for 20 minutes.

Top with the tomatoes and olives and season with
salt and pepper. Drizzle with the oil.

Bake for 25-30 minutes, or until risen and lightly
browned. Serve immediately.
