Cheese, Poppy Seed, and Sage Pizza

Makes
one (12-inch/30cm) pizza

1 1/2 quantities Pizza Dough

3 oz/90 g Mozzarella cheese, diced

4 oz/125 g Fontina cheese, diced
-
2/3 cup/80 g freshly grated Parmesan cheese
-
6-8 sage leaves, finely chopped
-
salt to taste
-
1 egg yolk, lightly beaten

4 tbsp poppy seeds
Method:

Prepare the pizza
dough and set aside to rise.

Preheat the oven
to 425°F/220°C/gas 7. Oil a 12-inch (30-cm) pizza
pan.

When the rising
time has elapsed, knead the dough for 1 minute, then
use your fingertips to press three-quarters of it
into the pan.

Sprinkle with the
Mozzarella, Fontina, Parmesan, and sage. Season with
salt.

Shape the
remaining dough into small balls. Place on the
pizza. Brush with the egg and sprinkle with poppy
seeds.

Bake for 10
minutes. Lower the oven temperature to
350°F/180°C/gas 4 and bake for
20-25
minutes more, or
until lightly browned. Serve hot.
