Brie and Potato Pizza Recipe

 

Ingredients

 

Makes one (12-inch/30cm) pizza

  • 1 quantity Pizza Dough (refer recipe)

  • 7 oz/200g potatoes, boiled, 1/4 mashed, rest diced

  • 2 oz/60 g Emmental cheese, diced

  • 2 oz/60 g Brie cheese, diced

  • 1 tbsp extra-virgin olive oil

  • salt to taste

  • 1 tbsp rosemary leaves

  • 1/2 cup/60 g freshly grated Parmesan cheese


Method:

  1. Prepare the pizza dough, incorporating the mashed potatoes. Set aside to rise.

  2. Oil a 12-inch (30-cm) pizza pan. After 1 hour, knead the dough for 1 minute, then use your fingertips to press it into the pan.

  3. Sprinkle with the Emmental, Brie, and the diced potatoes, Drizzle with the oil.

  4. Season with salt and rosemary and sprinkle with the Parmesan. Let rest for 30 minutes.

  5. Preheat the oven to 425°F/220°C/gas 7. Bake for 25-30 minutes, or until lightly browned. Serve hot.
