Tortiglioni with Herb Sauce and Pine

Serves 6

1 large bunch fresh mint

1 large bunch fresh
basil
-
2 cloves garlic
-
1 cup/125 g freshly grated Parmesan cheese
-
6 tbsp extra-virgin
olive oil
-
1 lb/500 g store-bought cheese-filled tortelli

1/2 cup/90 g pine nuts
Method:

Process
the mint, basil, garlic, Parmesan, 5 tablespoons of oil,
and salt in a food
processor or blender until smooth.

Cook the
pasta in a large pot of salted, boiling water until al
dente.

Toast the pine nuts in a nonstick frying pan
for 1 minute. Drain the pasta and place in a heated
serving bowl.

Add the herb sauce, sprinkle
with the pine nuts, and toss well.
Serve hot.
