Tortiglioni with Herb Sauce and Pine Nuts Recipe

 

Ingredients

 

Serves 6

  • 1 large bunch fresh mint

  • 1 large bunch fresh basil

  • 2 cloves garlic

  • 1 cup/125 g freshly grated Parmesan cheese

  • 6 tbsp extra-virgin olive oil

  • 1 lb/500 g store-bought cheese-filled tortelli

  • 1/2 cup/90 g pine nuts


Method:

  1. Process the mint, basil, garlic, Parmesan, 5 tablespoons of oil, and salt in a food processor or blender until smooth.

  2. Cook the pasta in a large pot of salted, boiling water until al dente.

  3. Toast the pine nuts in a nonstick frying pan for 1 minute. Drain the pasta and place in a heated serving bowl.

  4. Add the herb sauce, sprinkle with the pine nuts, and toss well. Serve hot.
