Spaghetti with Tomatoes and
Mozzarella
Recipe
Ingredients
Serves 4- 6

1 lb/500 g spaghetti
-
1 lb/500 g cherry tomatoes, cut in half
-
7 oz/200 g Mozzarella
cheese, cut into small cubes
-
2 tbsp finely chopped
basil
-
1 tbsp finely chopped
mint
-
1 clove garlic, finely
chopped
-
6 tbsp extra-virgin olive
oil
-
salt and freshly ground
black pepper to taste
-
fresh basil leaves, to garnish
Method:
-
Cook the pasta in a large
pot of salted, boiling water until al dente.
-
Drain and toss with the tomatoes, Mozzarella,
basil, mint, garlic, and oil in a large bowl. Season with
salt and pepper.

Transfer to serving
dishes and garnish with the basil leaves. Serve hot.
