Spaghetti with Tomatoes and Mozzarella Recipe

 

Ingredients

 

Serves 4-6

  • 1 lb/500 g spaghetti

  • 1 lb/500 g cherry tomatoes, cut in half

  • 7 oz/200 g Mozzarella cheese, cut into small cubes

  • 2 tbsp finely chopped basil

  • 1 tbsp finely chopped mint

  • 1 clove garlic, finely chopped

  • 6 tbsp extra-virgin olive oil

  • salt and freshly ground black pepper to taste

  • fresh basil leaves, to garnish


Method:

  1. Cook the pasta in a large pot of salted, boiling water until al dente.

  2. Drain and toss with the tomatoes, Mozzarella, basil, mint, garlic, and oil in a large bowl. Season with salt and pepper.

  3. Transfer to serving dishes and garnish with the basil leaves. Serve hot.
