Spaghetti with Cucumber Sauce Recipe

 

Ingredients

 

Serves 4-6

  • 1 onion, finely chopped

  • 1 clove garlic, finely chopped

  • 2 tbsp extra-virgin olive oil

  • 4 medium cucumbers, sliced

  • 4 tbsp dry white wine

  • 2 tsp soy sauce

  • 1 tbsp balsamic vinegar

  • 1 1/2 tsp sweet paprika

  • salt and freshly ground white pepper to taste

  • 1 lb/500 g spaghetti

  • 4 large lettuce leaves


Method:

  1. Sauté the onion and garlic in the oil in a large frying pan over medium heat until the garlic is pale gold.

  2. Add the cucumbers and pour in the wine. Cook for 3-5 minutes, stirring constantly.

  3. Add the soy sauce, balsamic vinegar, and 1 teaspoon of paprika. Season with salt and pepper.

  4. Transfer the mixture to a food processor or blender and process until thick and smooth.

  5. Cook the pasta in a large pot of salted, boiling water until al dente. Drain well.

  6. Arrange the lettuce on a large serving dish. Place the spaghetti on top of the lettuce.

  7. Spoon the sauce into the center and sprinkle with the remaining paprika.
