Spaghetti with Cucumber Sauce
Recipe
Ingredients
Serves 4-6

1 onion, finely chopped
-
1 clove garlic, finely chopped

2 tbsp extra-virgin olive oil
-
4 medium cucumbers, sliced
-
4 tbsp dry white wine
-
2 tsp soy sauce
-
1 tbsp balsamic vinegar
-
1 1/2 tsp sweet paprika
-
salt and freshly ground white pepper to taste

1 lb/500 g spaghetti
-
4 large lettuce
leaves
Method:

Sauté the onion and garlic in the oil in a large frying
pan over medium heat until the garlic is
pale gold.

Add the cucumbers and pour in the
wine. Cook for 3-5 minutes, stirring constantly.

Add the soy sauce, balsamic vinegar, and 1
teaspoon of paprika. Season with salt and pepper.

Transfer the mixture to a food processor or
blender and process until thick and smooth.

Cook the pasta in a large pot of salted, boiling water
until
al dente.
Drain well.

Arrange the lettuce on a
large serving dish. Place the spaghetti on top of the
lettuce.

Spoon the sauce into the center and
sprinkle with the remaining paprika.
