Penne with Tofu
Recipe
Ingredients
Serves 4-6

5 oz/150
g tofu (bean
curd)

1 small bunch basil
-
1 small bunch
parsley
-
1/3 cup/50 g blanched almonds
-
6 tbsp extra-virgin
olive oil
-
2 cloves garlic
-
salt to taste
-
1 lb/500 g wholewheat penne
Method:
-
Cook the tofu in a saucepan of boiling water for 4
minutes.
-
Drain and process in a food processor or blender with
the basil, parsley, almonds, oil, garlic, and salt until
smooth.

Cook the pasta in a large pot of salted, boiling water
until al dente.
Drain and toss gently with
the sauce. Serve hot.
