Penne with Tofu Recipe

 

Ingredients

 

Serves 4-6

  • 5 oz/150 g tofu (bean curd)

  • 1 small bunch basil

  • 1 small bunch parsley

  • 1/3 cup/50 g blanched almonds

  • 6 tbsp extra-virgin olive oil

  • 2 cloves garlic

  • salt to taste

  • 1 lb/500 g whole­wheat penne


Method:

  1. Cook the tofu in a saucepan of boiling water for 4 minutes. 

  2. Drain and process in a food processor or blender with the basil, parsley, almonds, oil, garlic, and salt until smooth.

  3. Cook the pasta in a large pot of salted, boiling water until al dente. Drain and toss gently with the sauce. Serve hot.
