Lumaconi with Bell Peppers
Recipe
Ingredients
Serves 4-6

1 medium
onion, cut into rings
-
4 tbsp extra-virgin olive oil
-
1
red bell pepper/capsicum, seeded, cored, and cut into thin strips

1
yellow bell pepper, seeded, cored, and cut into thin strips
-
1 lb/500 g lumaconi
-
1 tbsp
finely chopped parsley
-
1 tbsp finely chopped mint
-
1 tbsp finely chopped basil
-
salt and freshly ground black pepper to taste
Method:
-
Sauté
the onion in the oil in a large frying pan over medium
heat for 5 minutes, or until lightly browned.

Add the bell peppers and
sauté for about 10 minutes, or
until softened.
-
Meanwhile, cook the pasta in a large pot of salted,
boiling
water until al dente.
-
Drain and add to the pan
with the sauce.
Add the parsley, mint, and basil. Season with salt and
pepper.

Toss gently and
serve immediately.
