Lumaconi with Bell Peppers Recipe

 

Ingredients

 

Serves 4-6

  • 1 medium onion, cut into rings

  • 4 tbsp extra-virgin olive oil

  • 1 red bell pepper/capsicum, seeded, cored, and cut into thin strips

  • 1 yellow bell pepper, seeded, cored, and cut into thin strips

  • 1 lb/500 g lumaconi

  • 1 tbsp finely chopped parsley

  • 1 tbsp finely chopped mint

  • 1 tbsp finely chopped basil   

  • salt and freshly ground black pepper to taste


Method:

  1. Sauté the onion in the oil in a large frying pan over medium heat for 5 minutes, or until lightly browned.

  2. Add the bell peppers and sauté for about 10 minutes, or until softened.

  3. Meanwhile, cook the pasta in a large pot of salted, boiling water until al dente.

  4. Drain and add to the pan with the sauce. Add the parsley, mint, and basil. Season with salt and pepper.

  5. Toss gently and serve immediately.
