Homemade Basil Pasta with Tomatoes
and Olives

Ingredients
Serves 4

1 bunch basil,
torn
-
4 tbsp
extra-virgin olive oil
-
1 2/3 cups/250 g
all
purpose/plain flour
-
2 large eggs
-
salt and freshly ground black
pepper to taste

1 lb/500 g
cherry tomatoes, halved
-
1 clove garlic, finely chopped
-
1 cup/100 g black olives, pitted
Method:

Process the basil with 1 tablespoon of oil in a food
processor or blender until smooth.

Sift the flour into a bowl. Mix in the eggs, 1
tablespoon of the basil puree, and a pinch of salt to
make a stiff
dough.

Knead until smooth and elastic, 15-20 minutes.
Cover and let rest for 30 minutes.

Roll
the dough out very thinly on a floured surface. Cut into
1 1/2-inch (1-cm) ribbons.

Sauté the tomatoes and garlic in the remaining oil in a
large-frying pan over medium heat for 5 minutes.

Cook the pasta in a large pot of salted, boiling water
until al dente, about 3-4 minutes.

Drain and add to the pan with the sauce. Season with
salt and pepper and add the olives. Toss carefully.

Transfer to a serving dish. Drizzle with the remaining
oil and serve.
