Homemade Basil Pasta with Tomatoes and Olives Recipe

 

Ingredients

 

Serves 4

  • 1 bunch basil, torn

  • 4 tbsp extra-virgin olive oil

  • 1 2/3 cups/250 g all purpose/plain flour

  • 2 large eggs

  • salt and freshly ground black pepper to taste

  • 1 lb/500 g cherry tomatoes, halved

  • 1 clove garlic, finely chopped

  • 1 cup/100 g black olives, pitted

Method:

  1. Process the basil with 1 tablespoon of oil in a food processor or blender until smooth.

  2. Sift the flour into a bowl. Mix in the eggs, 1 tablespoon of the basil puree, and a pinch of salt to make a stiff dough.

  3. Knead until smooth and elastic, 15-20 minutes. Cover and let rest for 30 minutes.

  4. Roll the dough out very thinly on a floured surface. Cut into 1 1/2-inch (1-cm) ribbons.

  5. Sauté the tomatoes and garlic in the remaining oil in a large-frying pan over medium heat for 5 minutes.

  6. Cook the pasta in a large pot of salted, boiling water until al dente, about 3-4 minutes.

  7. Drain and add to the pan with the sauce. Season with salt and pepper and add the olives. Toss carefully.

  8. Transfer to a serving dish. Drizzle with the remaining oil and serve.
