Farfalle with Radicchio and Goat's Cheese Recipe

 

Ingredients

 

Serves 4-6

  • 1 onion, thinly sliced

  • 7 tbsp extra-virgin olive oil

  • 1 large head (or 2 small) red radicchio, cut in strips

  • salt and freshly ground black pepper to taste

  • 4 tbsp light beer

  • 1/2 cup/125 g soft fresh Caprino or other goat cheese

  • 2 tbsp milk

  • 1 lb/500 g farfalle


Method:

  1. Sauté the onion in 3 tablespoons of oil in a large frying pan until softened.

  2. Add the radicchio and season with salt and pepper. Cook for 5 minutes. Pour in the beer and cook until evaporated.

  3. Mix in the Caprino, softening the mixture with the milk.

  4. Cook the pasta in a large pot of salted, boiling salted water until al dente. Drain well and add to the pan with the sauce.

  5. Toss for a few minutes, drizzle with the remaining oil, and serve.
