Simple Baked Polenta Recipe

 

Ingredients

 

Serve 6

  • 2 1/2 quarts/2.5 liters water

  • 1 tbsp salt

  • 1 lb/500 g finely ground cornmeal

  • 1/2 cup/125 g butter, melted

  • 1 1/4 cups/150 g freshly grated Parmesan cheese


Method:

  1. Bring the water to a boil with the salt in a large pot. 

  2. Gradually sprinkle in the cornmeal, stirring constantly with a wooden spoon, to prevent lumps from forming.

  3. Continue cooking over low heat for 45-50 minutes, stirring almost constantly.

  4. Preheat the oven to 400°F/200°C/gas 6. Turn the polenta onto a board and slice thickly.

  5. Arrange the slices in layers in a baking dish. Pour the melted butter over the top and sprinkle with the Parmesan.

  6. Bake for 8-10 minutes, or until golden. Serve hot.
