Rice with
Yellow Lentils Recipe
Ingredients

1 cup/200 g
yellow lentils
-
1 large onion,
finely chopped
-
1 tsp cumin
seeds
-
5 tbsp
extra-virgin olive oil
-
1 cup/200 g
Basmati rice
-
4 cloves
-
1 stick
cinnamon
-
salt to taste
-
2 1/2
cups/625 ml water
Method:
-
Soak the
lentils for 2 hours in cold water.

Drain and
cook in salted, boiling water for 25 minutes.
Drain and set aside.

Sauté the
onion and cumin in the oil in a large frying pan
over medium heat for 10 minutes, or until
softened and golden.

Add the
lentils, rice, cloves, and cinnamon. Season with
salt.

Pour in the
water and bring to a boil. Cover and simmer over
low heat for 10 minutes, or until the water has
been absorbed and the rice is tender. Serve hot.
