Rice with Dates and Almonds Recipe

 

Ingredients

 

Serve 4

  • 3 1/2 cups/875 ml water

  • 2 1/2 cups/500 g Basmati rice

  • 1/8 tsp salt

  • 1 tsp saffron strands

  • scant 1/2 cup/100 g butter, melted

  • 1/2 cup/50 g chopped almonds

  • 1 cup/200 g chopped pitted dates

  • salt and freshly ground black pepper to taste


Method:

  1. Bring the water to a boil in a large saucepan over medium heat. Add the rice and salt. Return to a boil.

  2. Cover and simmer over low heat for 15 minutes. Add the saffron and half the butter.

  3. Cover the pan with a kitchen cloth. Finish cooking in the steam for 5-10 minutes, or until tender, over very low heat.

  4. Melt the remaining butter into a small saucepan over medium heat. Add the almonds and dates and cook for 4 minutes. Season with salt and pepper.

  5. Transfer the rice to a serving dish and garnish with the almonds and dates. Serve hot.
