Rice with
Dates and Almonds Recipe
Ingredients

3 1/2 cups/875 ml water

2 1/2 cups/500 g Basmati rice
-
1/8 tsp salt
-
1 tsp saffron strands
-
scant 1/2 cup/100
g butter, melted
-
1/2 cup/50 g chopped almonds
-
1 cup/200 g chopped pitted dates
-
salt and freshly ground black pepper to taste
Method:
-
Bring the water to a boil in a large saucepan over
medium heat. Add the rice and salt. Return to a
boil.

Cover and simmer over low heat for 15 minutes.
Add the saffron and half the butter.

Cover the pan with a kitchen cloth. Finish cooking
in the steam for 5-10 minutes, or until tender, over
very low heat.

Melt the remaining butter into a small saucepan over
medium heat. Add the almonds and dates and cook for
4
minutes. Season with salt and pepper.

Transfer
the rice to a serving dish and garnish with the
almonds and dates.
Serve hot.
