Rice with Coconut Milk Recipe

 

Ingredients

 

Serve 4

  • 1 tbsp finely chopped onion

  • 1 clove garlic, finely chopped

  • 5 cloves

  • 1/2 stick cinnamon

  • 1-2 tsp garam masala

  • 2 tbsp ghee (clarified butter)

  • 2 cups/400 g short-grain rice

  • salt to taste

  • 1 quart/1 liter coconut milk


Method:

  1. Sauté the onion, garlic, cloves, cinnamon, and garam masala in the ghee in a wok or large frying pan over medium heat until aromatic.

  2. Add the rice. Season with salt. Cook for 3 minutes.

  3. Pour in the coconut milk and cover and cook over low heat for 12-15 minutes, or until the rice is tender and all the liquid has been absorbed.

  4. Remove and discard the cloves and serve hot.
