Bulgur Wheat with Walnuts Recipe

 

Ingredients

 

Serve 6

  • 2 cups/250 g bulgur wheat

  • 2 1/3 cups/400 g shelled walnuts

  • 1 tsp salt

  • 1 onion, finely chopped

  • 16 cherry tomatoes, halved

  • 2 tbsp finely chopped mint + 1 sprig mint, to garnish

  • 4 tbsp extra-virgin olive oil


Method:

  1. Soak the bulgur wheat in warm water for 15 minutes. Drain, squeezing out the excess water.

  2. Chop the walnuts coarsely with 1 teaspoon of salt on a chopping board.

  3. Mix the bulgur wheat, walnuts, onion, tomatoes, and mint in a large bowl. Drizzle with the oil.

  4. Refrigerate  for 15 minutes. Garnish with the mint and serve with garlic-flavored yogurt.
