Bulgur Pilaf with Tofu Recipe

 

Ingredients

 

Serve 4

  • 1 small onion, finely chopped

  • 3 tbsp extra-virgin olive oil

  • 1 cup/150 g bulgur wheat

  • 2 cups/500 ml Vegetable Stock (refer recipe) or water

  • 1/2 tsp dried oregano

  • freshly ground black pepper to taste

  • 8 oz/250 g tofu (bean curd)

  • 2 tsp shoyu (sweet soy sauce) or 1 tbsp red miso

  • 3 tbsp finely chopped parsley

  • 2 tbsp sesame seeds


Method:

  1. Sauté the onion in the oil in a large frying pan over medium heat for about 5 minutes, or until softened.

  2. Add the bulgur and sauté for 5 minutes. Pour in the stock and season with the oregano and pepper.

  3. Bring to a boil. Cover and simmer over low heat for 15 minutes, or until the liquid has been absorbed.

  4. Mix the tofu with the shoyu in a large bowl. Add the bulgur and parsley. Sprinkle with sesame seeds and serve hot.
