Aromatic Lemon Rice Recipe

 

Ingredients

 

Serve 4

  • 1 cup/200 g Basmati rice

  • 1 2/3 cups/400 ml water

  • 1/2 tsp ground turmeric

  • 1/8 tsp salt

  • 2 tbsp shredded coconut

  • 2 tbsp coconut milk

  • 4 tbsp butter

  • 4 tbsp oil

  • 1 green chili pepper, seeded and finely sliced

  • seeds from 4 cardamom pods

  • 3 whole black pepper corns

  • 2 tbsp chopped almonds

  • 1/2 tsp cumin seeds

  • 1/2 tsp mustard seeds

  • juice of 1/2 lemon


Method:

  1. Place the rice in a large saucepan with the water, turmeric, and salt.

  2. Bring to a boil, cover, and simmer over low heat for 10 minutes. Remove from the heat and leave covered.

  3. Soak the coconut in the coconut milk in a small bowl. Melt the butter in a small saucepan over medium heat.

  4. Add the oil, chili pepper, cardamom, pepper corns, almonds, cumin, and mustard seeds.

  5. Cook for 3-4 minutes, or until the mustard seeds begin to crackle.

  6. Add this mixture to the rice. Add the lemon juice and coconut and mix with a fork.

  7. Cook over low heat for 5 minutes, or until the rice is soft and fluffy. Transfer to a serving dish and serve.
