Lemon Rice Recipe

1 cup/200
g Basmati rice
-
1 2/3 cups/400 ml water
-
1/2 tsp ground turmeric
-
1/8 tsp salt
-
2 tbsp shredded coconut
-
2 tbsp coconut milk
-
4 tbsp butter
-
4 tbsp oil
-
1 green chili pepper,
seeded and finely sliced
-
seeds from 4 cardamom pods
-
3 whole black pepper corns
-
2 tbsp chopped almonds
-
1/2 tsp cumin seeds
-
1/2 tsp mustard seeds
-
juice of 1/2
lemon
Method:
-
Place the
rice in a large saucepan with the water,
turmeric, and salt.
-
Bring to a
boil, cover, and simmer over low heat for 10
minutes. Remove from the heat and leave covered.

Soak the
coconut in the coconut milk in a small bowl.
Melt the butter in a small saucepan over medium
heat.

Add the oil,
chili pepper, cardamom, pepper corns, almonds,
cumin, and mustard seeds.

Cook for 3-4
minutes, or until the mustard seeds begin to
crackle.

Add this
mixture to the rice. Add the lemon juice and
coconut and mix with a fork.

Cook over low
heat for 5 minutes, or until the rice is soft
and fluffy. Transfer to a serving dish and
serve.
