Zucchini
and Onion Fritters Recipe
Ingredients

Batter:
-
4 oz/125 g zucchini/courgettes
-
1/2 oz/15 g fresh
yeast or 1 package (1/4-oz/7-g) active dry yeast
-
1/2 cup/125 ml milk
-
3/4 cup/125 g all purpose/plain flour
-
1 egg, separated
-
1/4 tsp salt
-
2 cups/500 ml olive oil, for frying

2 large onions,
thinly sliced
Method:

Wash and dry the zucchini and coarsely chop.

Dissolve the yeast in 2 tablespoons of warm milk.
Let stand for 10 minutes, until foamy.

Add the flour, egg yolk, and salt. Stir in the
remaining milk.

Beat the egg white in a large bowl until stiff and
fold it into the batter.

Heat the oil
in a deep frying pan until very hot. Dip
the zucchini and onions into the batter and fry in
small batches until golden brown. Serve hot.
