Zucchini and Onion Fritters Recipe

 

Ingredients

 

Serve 4

 

Batter:

  • 4 oz/125 g zucchini/courgettes

  • 1/2 oz/15 g fresh yeast or 1 package (1/4-oz/7-g) active dry yeast

  • 1/2 cup/125 ml milk

  • 3/4 cup/125 g all purpose/plain flour

  • 1 egg, separated

  • 1/4 tsp salt

  • 2 cups/500 ml olive oil, for frying

  • 2 large onions, thinly sliced


Method:

  1. Wash and dry the zucchini and coarsely chop.

  2. Dissolve the yeast in 2 tablespoons of warm milk. Let stand for 10 minutes, until foamy.

  3. Add the flour, egg yolk, and salt. Stir in the remaining milk.

  4. Beat the egg white in a large bowl until stiff and fold it into the batter.

  5. Heat the oil in a deep frying pan until very hot. Dip the zucchini and onions into the batter and fry in small batches until golden brown. Serve hot.
