Zucchini Fritters Recipe

 

Ingredients

 

Serve 6

  • 4 large zucchini/courgettes

  • 1 cup/125 g freshly grated Pecorino cheese

  • 2 eggs

  • 4 tbsp fine dry bread crumbs

  • 2 tbsp finely chopped parsley

  • 2 tbsp finely chopped mint

  • salt and freshly ground black pepper to taste

  • 2 cups/500 ml olive oil, for frying


Method:

  1. Cook the zucchini in salted, boiling water until almost tender. Drain and let cool slightly.

  2. Pat dry and chop finely. Transfer to a large bowl and mix in the Pecorino, eggs, bread crumbs, parsley, mint, salt, and pepper.

  3. Dust your hands with flour and shape the mixture into small balls  about the size of golf balls. Roll them in bread crumbs until well coated.

  4. Heat the oil in a large frying pan and fry the patties in small batches until golden and crisp.

  5. Drain well and dry on paper towels. Serve hot.
