Spicy Peanut Fritters Recipe

 

Ingredients

 

Serve 6

  • 1 1/4 cups/200 g raw peanuts

  • 1 tsp coriander seeds

  • 2 tsp finely chopped ginger

  • 2 cloves garlic

  • 1 tsp red pepper

  • flakes (or 2 crumbled dried chilies)

  • 1 tsp salt

  • 1/2 tsp ground turmeric

  • 1 cup/150 g rice flour

  • 2/3 cup/100 g all purpose/plain flour

  • 1 cup/250 ml coconut milk

  • 2 cups/500 ml oil, for frying


Method:

  1. Place the peanuts in a wok and dry-fry over low heat for 5 minutes. Rub them to remove the skins and chop coarsely.

  2. Process the coriander seeds, ginger, garlic, red pepper flakes, salt, and turmeric in a food processor or blender until smooth.

  3. Sift both flours into a large bowl. Mix in the spice mixture and coconut milk, blending well. Add the peanuts.

  4. Heat half the oil in a wok until very hot and fry tablespoons of batter in small batches until golden brown.

  5. Remove with a slotted spoon and drain well on paper towels. Serve hot or at room temperature.
