Spicy Fried Parcels Recipe

 

Ingredients

 

Serve 4

 

Dough:

  • 1 1/2 cups/225 g all purpose/plain flour

  • 1/2 tsp salt

  • 4 tbsp butter

  • 1/2 cup/125 ml olive oil 

Filing:

  • 1 lb/500 g potatoes, cut in small cubes

  • 2 red onions, cut into thin wedges

  • 1/2 tsp ground ginger

  • 1/2 tsp ground cumin

  • 1/2 tsp chile pepper

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground cloves

  • 4 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice

  • 1 tbsp water

  • 1/2 tsp salt

  • 10-12 leaves fresh cilantro/coriander, torn

  • 2 cups/500 ml olive oil, for frying


Method:

  1. Dough: Sift the flour and salt into a large bowl. Mix in the butter and oil to make a smooth dough.

  2. Shape into a ball, wrap in waxed paper, and let rest for 1 hour.

  3. Filling: Cook the potatoes in salted, boiling water for 10 minutes. Drain.

  4. Cook the onions, spices, oil, lemon juice, water, and salt in a large frying pan for 10 minutes.

  5. Mash the potatoes. Add them to the onion mixture with the cilantro and mix well.

  6. Roll the dough out thinly on a floured work surface. Cut out 4-inch (10-cm) rounds.

  7. Drop a tablespoon of the filling into the ,center of each round. Fold in half and seal the edges well.

  8. Heat the oil in a large frying pan until very hot and fry in small batches for 3-4 minutes on each side, or until golden all over.

  9. Remove with a slotted spoon and drain on paper towels. Serve hot.
