Spicy Fried
Parcels Recipe

Dough:
Filing:

1 lb/500 g potatoes, cut in small
cubes

2 red onions, cut into thin wedges
-
1/2 tsp ground ginger
-
1/2 tsp ground cumin
-
1/2 tsp chile pepper
-
1/2 tsp ground cinnamon
-
1/4 tsp ground cloves
-
4 tbsp extra-virgin olive oil
-
1 tbsp lemon juice
-
1 tbsp water
-
1/2 tsp salt
-
10-12 leaves fresh cilantro/coriander,
torn
-
2 cups/500 ml olive oil, for frying
Method:

Dough: Sift the flour and salt into a large bowl. Mix
in the butter and oil to make a smooth dough.

Shape into a ball, wrap in waxed paper, and let rest
for 1 hour.

Filling: Cook the potatoes in salted, boiling water
for 10 minutes. Drain.

Cook the onions, spices, oil, lemon juice, water,
and salt in a large frying pan for 10 minutes.

Mash the potatoes. Add them to the onion mixture
with the cilantro and mix well.

Roll the dough out thinly on a floured work surface.
Cut out 4-inch (10-cm) rounds.

Drop a tablespoon of the filling into the ,center of
each round. Fold in half and seal the edges well.

Heat the oil in a large frying pan until very hot
and fry in small batches for 3-4 minutes on each
side, or until golden all over.

Remove with a slotted spoon and drain on paper
towels.
Serve hot.
