Pumpkin Fritters Recipe

 

Ingredients

 

Serve 6

  • 10 oz/300 g pumpkin flesh

  • 3 eggs, separated

  • 1 cup/150 g all purpose/plain flour

  • 1 amaretto cookie, crumbled

  • 2 tbsp freshly grated Parmesan cheese

  • 1/2 tsp baking powder

  • 1/4 tsp freshly grated nutmeg

  • 1/2 tsp salt

  • 2 cups/500 ml olive oil, for frying


Method:

  1. Cook the pumpkin in salted, boiling water for 12-15 minutes, or until tender. Drain and chop in a food processor until pureed.

  2. Transfer to a large bowl and mix in 1 egg and 2 egg yolks, flour, the amaretto cookie, Parmesan, baking powder, and nutmeg.

  3. Beat the egg whites until stiff and gently fold them into the pumpkin mixture.

  4. Heat the oil in a large frying pan until very hot and fry tablespoons of the mixture in small batches until golden brown and crisp.

  5. Remove with a slotted spoon and drain well on paper towels. Serve hot.
