Fritters Recipe

oz/300 g pumpkin flesh

3
eggs,
separated
-
1 cup/150 g all purpose/plain flour
-
1 amaretto cookie, crumbled
-
2 tbsp freshly grated Parmesan cheese
-
1/2 tsp baking powder
-
1/4 tsp freshly grated nutmeg
-
1/2 tsp salt
-
2 cups/500 ml
olive oil, for frying
Method:

Cook
the pumpkin in salted, boiling water for
12-15
minutes, or until tender.
Drain and chop in a food processor until pureed.

Transfer
to a large bowl and mix in 1 egg and 2 egg yolks,
flour, the amaretto cookie, Parmesan, baking powder,
and nutmeg.

Beat the egg whites until stiff and gently fold them
into the pumpkin mixture.

Heat the oil in a large frying pan until very hot
and
fry tablespoons of the mixture in small batches
until
golden brown and crisp.

Remove with a slotted spoon and drain well on paper
towels.
Serve hot.
