Onion Rings with Basil Recipe

 

Ingredients

 

Serve 4

  • 2 large onions, cut into small rings

  • 1 2/3 cups/250 g all purpose/plain flour

  • 1/3 cup/50 g cornstarch/corn flour

  • 2 tbsp finely chopped parsley

  • 3 tbsp finely chopped basil

  • salt and freshly ground black pepper to taste

  • 1 cup/250 ml milk

  • 2 cups/500 ml olive oil, for frying


Method:

  1. Soak the onions in cold water for 30 minutes. Drain and dry on paper towels.

  2. Sift 1 cup (150 g) of the flour into a large bowl. Stir in the cornstarch, parsley, and basil. Season with salt and pepper.

  3. Sift the remaining flour into a separate bowl. Dip the onion rings in the plain flour, then in the milk, and finally in the seasoned flour.

  4. Heat the oil in a large frying pan until very hot. Fry the onion rings for 5-7 minutes, or until crisp and golden.

  5. Remove them with a slotted spoon and drain on paper towels. Serve hot.
