Lentil Burgers Recipe

 

Ingredients

 

Serve 4

  • 1 lb/500 g red lentils

  • 7 oz/200 g tofu, coarsely chopped

  • salt to taste

  • 2 tbsp finely chopped parsley

  • 1/2 cup/60 g fine dry bread crumbs

  • 6 tbsp sunflower oil


Method:

  1. Cook the lentils in a large pot of salted, boiling water for about 30 minutes, or until tender.

  2. Drain and process in a food processor with the tofu until finely chopped. Season with salt and add the parsley. Let cool slightly.

  3. Shape the mixture into burgers about 3 inches (8 cm) in diameter and 1 inch (2.5 cm) thick. Dip each one in the bread crumbs.

  4. Heat the oil in a large frying pan until very hot and fry the burgers in small batches for 3-4 minutes, or until browned.

  5. Turn and cook on the other side for 3-4 minutes, until browned all over. Serve hot.
