Potato Balls Recipe

2 lb/1
kg floury potatoes
-
1/2 cup/125
g butter,
cut up

3
eggs, separated
-
1 cup/125 g freshly grated
Parmesan cheese
-
2 tbsp pine nuts, finely
ground
-
1 tbsp finely chopped
parsley
-
salt to taste
-
1 cup/125 g fine dry bread
crumbs
-
2 cups/500 ml
olive oil,
for frying
Method:
-
Cook the
potatoes in their skins in salted, boiling water
for 20-25
minutes,
or until tender. Slip the skins off while hot
and mash.

Place the
mashed potato in a large bowl and mix in the
butter, egg yolks, Parmesan, pine nuts, parsley,
and salt.

Beat the egg
whites in a medium bowl until frothy. Shape
tablespoons of the potato mixture into balls the
size of marbles.

Dip in the
egg white, then in the bread crumbs.

Heat the oil
in a large frying pan until very hot and fry the
potato balls in small batches for 5-7 minutes,
or until golden.

Remove with a
slotted spoon and drain well on paper towels.
Serve hot.
