Fried Potato Balls Recipe

 

Ingredients

 

Serve 6

  • 2 lb/1 kg floury potatoes

  • 1/2 cup/125 g butter, cut up

  • 3 eggs, separated

  • 1 cup/125 g freshly grated Parmesan cheese

  • 2 tbsp pine nuts, finely ground

  • 1 tbsp finely chopped parsley

  • salt to taste

  • 1 cup/125 g fine dry bread crumbs

  • 2 cups/500 ml olive oil, for frying


Method:

  1. Cook the potatoes in their skins in salted, boiling water for 20-25 minutes, or until tender. Slip the skins off while hot and mash.

  2. Place the mashed potato in a large bowl and mix in the butter, egg yolks, Parmesan, pine nuts, parsley, and salt.

  3. Beat the egg whites in a medium bowl until frothy. Shape tablespoons of the potato mixture into balls the size of marbles.

  4. Dip in the egg white, then in the bread crumbs.

  5. Heat the oil in a large frying pan until very hot and fry the potato balls in small batches for 5-7 minutes, or until golden.

  6. Remove with a slotted spoon and drain well on paper towels. Serve hot.
