Corn Fritters Recipe

 

Ingredients

 

Serve 4

  • 2/3 cup/100 g all purpose/plain flour

  • 2 eggs, lightly beaten

  • 2/3 cup/150 ml milk

  • 3 1/2 cups/350 g canned corn

  • 3/4 cup/90 g freshly grated Parmesan cheese

  • salt and freshly ground black pepper to taste

  • 2 cups/500 ml olive oil, for frying


Method:

  1. Mix the flour, eggs, milk, corn, and Parmesan in a large bowl until well blended. Season with salt and pepper.

  2. Heat the oil in a large frying pan until very hot and fry tablespoons of the corn mixture in small batches for 5-7 minutes, or until golden brown.

  3. Remove with a slotted spoon and drain well on paper towels. Serve hot.
