1 1/2 tbsp butter

3 eggs

3/4 cup/90 g freshly grated Montasio or
Pecorino cheese

2 tbsp freshly grated
Parmesan cheese

1/8 tsp freshly grated nutmeg

1/8 tsp salt
-
1 cup/250 ml olive
oil, for frying
Method:

Preheat the
oven to 350°F/180°C/gas 4. Line a baking sheet
with waxed paper.

Beat the
butter, eggs, Montasio, Parmesan, nutmeg, and
salt in a large bowl until creamy.

Pour the
mixture onto the prepared baking sheet. Flatten
to about 1/2 inch (1 cm) thick.

Bake for
about 15 minutes, or until golden brown. Let
cool, then cut into squares.

Heat the
oil in a large frying pan and fry the crisps for
5 minutes until golden brown.

Serve with
creamy vegetable soups.
