Cheese Crisps Recipe

 

Ingredients

 

Serve 4

  • 1 1/2 tbsp butter

  • 3 eggs

  • 3/4 cup/90 g freshly grated Montasio or Pecorino cheese

  • 2 tbsp freshly grated Parmesan cheese

  • 1/8 tsp freshly grated nutmeg

  • 1/8 tsp salt

  • 1 cup/250 ml olive oil, for frying


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Line a baking sheet with waxed paper.

  2. Beat the butter, eggs, Montasio, Parmesan, nutmeg, and salt in a large bowl until creamy.

  3. Pour the mixture onto the prepared baking sheet. Flatten to about 1/2 inch (1 cm) thick.

  4. Bake for about 15 minutes, or until golden brown. Let cool, then cut into squares.

  5. Heat the oil in a large frying pan and fry the crisps for 5 minutes until golden brown.

  6. Serve with creamy vegetable soups.
